Cultivation:
Control and maintenance of spurred cordon with short pruning in late winter. Nutrient inputs with organic manure-based fertilizers in late winter, and before bud break. Periodic manual pruning for vegetation control and production control with manual selection of bunches before veraison. Light and periodic defoliation from after fruit set. Manual harvesting in small crates. Yield: 50 q./ ha.
Vinification:
Maceration on the skins proceeds for about 20 days in steel tanks. Alcoholic fermentation is initiated with selected yeasts. Malolactic fermentation is completed in tanks, after which the wine is aged in new and second and third-passage French oak barrels for about 2 years. The wine put on the market after several months in the bottle.
Tasting notes:
Colour: A deep and intense ruby red.
Nose: opens with aromatic complexity where fruit and spices integrate harmoniously. Hints of ripe red berry fruit and notes of blackberry and violet stand out. Extensive spicy and balsamic notes.
Palate: great balance and elegance mixed with varied flavor power, confirming and expanding the olfactory scents. Red berry fruits especially underbrush, blackberry, balsamic notes and a touch of bitter chocolate. With great impact and persistence it denotes good acidity well integrated with substantial sweet tannins that confirm structure and body. Wine of great character and distinct personality, young but already ready and with great potential to come.
